The Freixenet family vineyard "La Freixenada" in Sant Quinti de Medlona has soils that are chalky and stratified, ideal for the Chardonnay and Pinot Noir varietals. Freixenet produces only méthode champenoise sparkling wines. The wine goes through two fermentations with the second fermentation taking place in the bottle. Elyssia Gran Cuvée Brut is aged for up to fifteen months in a cave.
