Harvested by hand, the range of Freixenet's vineyards reaches across the span of several months. From the end of August for the harvest of the warm-weather Macabeo grapes, through harvest at the beginning of October for the higher elevation Parellada variety, our winemaker waits out the perfect time to gather each grape, encouraging the vines to tell him when the grapes are ready.
Carta Nevada Brut uses the same luscious Spanish grape varieties as Cordon Negro Brut and Extra Brut, embracing Macabeo, Xarel-lo and Parellada grape varieties, with slightly higher alcohol levels and a dosage of 37 grams per liter. The light, fruity Macabeo, blended with the robust, powerful depth of Xarel-lo, and the demonstrative finesse of the Parellada grapes delivers nicely balanced aroma and acidity.
