Freixenet sparkling wine from SpainSweet Potato Hash

Ingredients
2 medium sweet potatoes, peeled and cubed
2 tbsp olive oil
1 Spanish onion, diced
1 red bell pepper, diced
1/2 tsp ginger
1/2 tsp cumin
1/2 tsp sage

Directions
Place sweet potatoes in a large pot and cover with cold water. Bring to a boil and cook potatoes until tender, about 15 to 20 minutes. Drain potatoes and pat dry. Heat large skillet or saucepan at medium high heat and add oil. Add onion and sauté until golden and tender, about 5 minutes. Reduce heat to medium and add bell pepper. Saute another 5 minutes. Add ginger, cumin, sage and potatoes and toss. Cook over medium heat until potatoes are browned and extra tender.

Serve warm.
