Cava Pancake

Whisk 3 large eggs, 1 1/2 c buttermilk and 3 tbsp canola oil in a mixing bowl.

Sift 2 1/4 c all-purpose flour, 1/2 tsp salt, 3 tsp baking powder & 3 tbsp sugar.

Stir the wet mixture into the dry ingredients until there is no longer dry flour. Gently fold 1/4 c Brut Cava into batter until fully incorporated.

Preheat griddle to 375º F. Once heated, drop 1/4 c batter onto greased griddle, baking on one side until bubbles form. Once edges are firm, flip pancake and cook until golden.
