Cava Vinaigrette

In a medium bowl, whisk 1 tbsp champagne vinegar, 2 tbsp Brut Cava, 1 tbsp f resh lemon juice, 1 tbsp dijon mustard & 1 1/2 tsp honey.
Mash 1 garlic clove until it becomes a paste, & add to mixture.
Sprinkle salt and pepper to taste, and combine 1/4 cups extra virgin olive oil.
Whisk briefly.
*Note: vinaigrette will NOT emulsify.
